PESTO!!!

So I have discovered that you can make pesto with any vegetable or herb.  My most recent one has been with spinach.

Spinach Pesto
handful of Spinach
some Cranberries
some Nuts (I use a combo of walnuts, sunflower seeds, pepitas and/or almonds)
some Cheese (I like parm, asiago, or gorgonzola)
splash of balsamic vinegar
pinch of salt and pepper
some dijon mustard
some siracha or hot sauce (to taste)

Put it all in a food processor and puree.  YUM!

I have been using this for my wraps, on sandwiches, on pizzas, on pasta and basically everything.  It is so easy and adds lots of flavor to anything.
