Banana Ice Cream Sandwiches

Here is my new favorite dessert.  The kids love them too.

For the cookies :

1 cup oat groats or 1 1/2 cup oat flour
1/2 cup raw cacao powder
200gr dates
3 tbsp coconut butter/oil
2 tbsp agave syrup
1 tbsp water

Filling :
6 frozen bananas
Chocolate chips (optional)

To make the cookies, if using oat groats, grind them to make oat flour. Mix with cacao powder. In a food processor blend dates with water, agave and coconut butter. Add in the dry mix and process until the batter comes together. Transfer the batter on a baking paper and roll out the dough using a rolling pin. Using a cookie cutter, cut out cookies until you use up all the dough. Freeze the cookies for an hour.

To make the ice cream use a blender or a food processor to mash the frozen bananas. (add also the vanilla in there)

If using an ice cream sandwich kit, to assemble the ice cream sandwiches place a cookie on the bottom of the mold, put 1-2 tablespoons of ice cream in the sleeve of the sandwich mold and top with a second cookie. Press down on the top cookie until the ice cream has spread out. Remove the base from the sleeve and carefully press the ice cream sandwich out. You can use this method with a deep metal ring and push it out with your fingers. Freeze until ready to serve.

What's not to love?  Banana, dates, and chocolate...all frozen on a hot summer day :D :D  I got the recipe from http://www.veggie-wedgie.com/ and she has a couple of other frozen treats that I want to try.
