Stuffed Mushrooms

This is from my sister in law, Sara.

Whole Wheat Couscous (or Quinoa)
Celery
Onion
Roasted Red Peppers
Olive Oil
Crabmeat (optional)
Cheese (Parm, Blue, Mozz, Feta, etc)

Method
1.  Saute onions, celery, red peppers. 
2.  Add couscous, cheese and an egg (for binding)
3.  Stuff into mushrooms
4.  Sprinkle cheese on top
4.  Bake at 375 for about 30 minutes...increase temperature to 425 for last 5 or 10 minutes until brown on top.
