Chocolate Beet Cake

Blaylock Chocolate Deliciousness:
3 oz unsweetened baking chocolate
8 oz can of Beets
1 stick butter
2.5 cups brown sugar
3 eggs
2 tsp vanilla
2 cups flour
2 tsp baking soda
1/2 tsp salt
1/2 cup buttermilk

Beat butter with sugar, eggs and vanilla for five min.  Puree beets in blender with all of the juice in the can.  Melt unsweetened chocolate in microwave and put in batter.  Mix dry ingredients and add to cream mixture.  Add buttermilk.  Put pureed beats in batter and mix till golden.  Bake at 350 for 30-40 min in 2 9-inch pans or 60 min in larger pan.
