Blueberry Lemon Muffin

This is based from the cookbook Deceptively Delicious...I didn't add the vegetable puree.

1/2 cup light brown sugar
2 T butter
1 cup yogurt
2 cup blueberries
1 large egg
2 t lemon extract
1 t grated lemon zest
2 cup whole wheat flour
1/4 cup flaxseed meal
1 t baking powder
1 t baking soda

Method:
1. Preheat oven 350
2. Beat sugar and butter
3. Add wet ingredients
4. Combine dry ingredients and whisk well.
5. Add dry to wet ingredients
6. Fold in the blueberries.  Don't overmix
7. Bake for about 13 minutes.

Makes about 23 muffins
